In the 21st century life style, dieting has
three distinct goals:
1. Nutrition
2. Weight control
3. Inflammation control
First, nutrition deficiency problem
Between 1910 and 1960, nutritional science discovered the
link between nutritional deficiency and disease: Deficiency in Vitamin C leads
to scurvy, Vitamin A - night blindness, Vitamin D - rickets, thiamine -
beriberi, niacin - pellagra and so forth. In the 21st century, our
food is deficient of anti-oxidants and anti-inflammatory components.
During the world wart II the emphasis shifted to increase
in protein and dairy intake to make stronger and taller people. This led to the
concept of “where is the beef” axiom. Around 1970 the beef industry and dairy
industry responded to the medical fact that high intake of saturated fats
increase the heart disease risk. Thus low fat meat and low fat dairy was
introduced.
Second, the weight gain problem
The other aspect of post World War II food industry was
the mass production of processed food loaded with sugar, refined flour, and
saturated fat and salt.
The medical system argued against saturated fat like lard
and butter. Polyunsaturated vegetable oils like corn oil, safflower oil, soybean
oil and sunflower oils became the common ingredient of our daily food. These
oils, although palatable, promote inflammation in your body.
The medical system labeled weight gain as an epidemic.
There is mass hysteria about dieting. People started starving by going on fad
diets and food got paired with moral guilt. Sedentary and internet dominant
agendas, lack of sleep, stressful life including the stress of dieting further
promotes obesity by altering the leptin, grehlin, insulin and other hormones.
Studies show that frequent calorie restricted dieting is the most important
factor in future weight gain.
Finally, the inflammation problem
Added to the change in cooking oil, the meat that people
eat came from grain fed animals. These two factors together increased the
intake of omega-6 fatty acids to a physiologically risky level. The cell
membranes in our body got overloaded with arachidonic acid, which increases the
chemical mediators leading to inflammation. Excess of inflammatory mediators
increase the risk of several diseases including heart disease, cancer,
arthritis, fibromyalgia etc.
Assume that you are not overweight, is it OK to
continue your current eating habits?
The answer is by default we are all eating anti-oxidant
deficient food, high glycemic carbs and pro-inflammatory omega-6 fats. There
are more than 50,000 processed foods in the market. We eat fast foods, junk
foods, and more than 50% of our meals are eaten outside our home.
So, if you follow your default diet you are at fault. If
your goal is wellness and longevity, you need to be pro-active and make
informed choices in your eating habits. Science has not succeeded in making fat
people thin. Rather than suffering from chronic restraint on calorie intake,
focus on eating an anti-inflammatory diet.
